We recommend a full-bodied wine with sufficient acidity and minerality which will help to digest the meal. Generally Cabernet Sauvignon and wines of this type would be an ideal choice. It is important to select wine which has been matured in quality barrels. Highly recommended are wines from Bordeaux and similar types from Italian central regions as well as Spanish wines from the Rioja region. The best choice of white wines would be represented by Chardonnay, matured in barrels, and spicy Sauvignons from the Loire Valley.
